PRIMOLIO is the "novello", early harvest extra virgin olive oil from Colletorto. This is produced after the pressing of the first olives.
To enjoy it at its best and to savour all its natural qualities it is preferable to use it plain for salad dressings and "bruschetta" (toasted bread) or "pinzimonio" (a dip prepared with olive oil and garlic, for rain crisp vegetables).
