San Giovanni Battista Cooperative Olive Mill, owner of the registered brand “Olio di Colletorto”, was founded in 1968 by a group of olive growers who shared a common goal: to enhance their territory through a project based on quality, identity and full control of the supply chain.

Over the years, the cooperative has developed a solid and consistent production model, built around the central role of raw materials, the agricultural expertise of its members and a constant process of technological evolution.

From its early traditional milling systems, the olive mill has progressively evolved towards state-of-the-art continuous cold extraction technologies, adopting innovation at every stage to enhance product quality.

Today, the cooperative brings together 120 olive growers, all based in Colletorto and neighbouring areas, who represent the exclusive source of olives processed in the mill. Since 2017, the cooperative has also been officially recognised as a Producers’ Organization, confirming its structured and market-oriented approach.

Colletorto is a small hill town in the Molise region, characterised by a microclimate naturally suited to olive growing. Within this context, the ancient local cultivar “Oliva Nera di Colletorto” has been preserved over time. This exclusive, centuries-old variety accounts for approximately 80% of total production.

It is a resilient and well-balanced cultivar, naturally adapted to the territory, allowing for sustainable farming practices and minimal phytosanitary intervention.

Olio di Colletorto Extra Virgin Olive Oil fully reflects these characteristics, offering a harmonious, delicate and fruity sensory profile, combined with excellent oxidative stability. An olive oil designed for those who seek authenticity, balance and a clear expression of origin.

Processing takes place in a modern two-phase continuous cold extraction plant, with carefully controlled temperatures. The entire process is designed to preserve the oil’s sensory qualities, while ensuring efficiency and environmental sustainability.

All by-products generated during processing are fully recovered and recycled, in line with a responsible and environmentally conscious approach.

The oil is stored under a nitrogen-controlled atmosphere, protecting freshness, aromas and quality over time.

Every stage of production, from olive growing to bottling, is documented through a fully certified traceability system in accordance with UNI ISO 22005:2008, ensuring transparency and reliability for the market.

Annual production ranges between 900 and 1,400 quintals of olive oil, obtained from olives grown on approximately 280 hectares, corresponding to about 35,000 olive trees. Part of the production follows integrated and organic farming standards and is certified PDO Molise.

Harvesting is carried out using careful, fruit-respecting techniques, avoiding damage and contact with the ground. Olives are delivered to the mill on the same day of harvest, using ventilated crates supplied by the cooperative, and are processed within 24 hours, preserving the integrity and aromatic expression of the oil.

Today, Olio di Colletorto represents the intersection of local tradition, agricultural expertise, and contemporary vision, offering the market an authentic, consistent, and distinctive extra virgin olive oil.

New extraction line also open to non-members

Our Cooperative is expanding its range of services to members and non-members, with a new extraction line that allows for batch processing on a contract basis. This line features highly innovative technology and newly developed machinery for all processing phases, increasing production capacity and increasing quantitative and qualitative yields.

  • Variable-speed crushing and particle size control preserve volatile substances.
  • Kneading with variable-speed paddles improves the agglomeration of oil microparticles and speeds up the process.
  • A new Rex Amenduni series decanter with variable speeds and internal geometry and a two-phase design reduces oxidation and leaching, resulting in oils richer in polyphenols.
  • Furthermore, with two-phase processing, the wastewater generated enters the circular economy cycle, eliminating disposal costs and environmental impact.
